A different day's Peach Canning

The variety of peaches we grow ripen over a 10 day period, usually in late August. I can them every other day. We planted both peach and apple trees while still building our house, which was more than 30 years ago. The peaches started bearing well 4 or 5 years BEFORE we had a significant harvest from our Semi-dwarf apple trees. Keep this in mind when planning your orchard. Apples are much easier to can as sauce, and the cooler Fall harvest is much nicer weather for canning. But we had peaches for years before we had any apples at all.
