Red Cabbage

The darker colored cabbages seem to be more resistant to insect damage, and a little hardier. Everyone may not like the color in sauerkraut or coleslaw, but some people claim all the dark red and blue vegetable varieties have far more antioxidants. I don't really know, but I often think they taste better, and they do bring variety to the table.
