Packing meat into jars

The four and a half quart kettle is pretty full of meat and the juices from cooking it. I am using a non-reactive 'Camping' fork to pack the jars with chunks of meat. When ever the power is out, we switch to Lexan or Nylon Camping tableware, because it is much easier to wash by hand than stainless or silver ware. The canning funnel is resting on the next jar to be filled, and the small pot in the back was used to boil the lids. I will take them out as I need them for each jar. The recipe I am using today calls for one inch of head space. Follow your own recipe though.
